Carlo De Paolis

Carlo attends the Institut Paul Bocuse in Lyon, where he hones his culinary and managerial skills. After gaining initial work experience in some of Europe’s top Michelin-starred restaurants, he completes an Executive Master’s degree at SDA Bocconi. He then works in F&B R&D for Chef Express, discovering a passion for consulting and training. Today, he teaches at the same Institut Paul Bocuse and at CAST Alimenti. After years of consulting experience in the F&B sector, in 2023 he founded We Are SODA with Andrea Bertini, developing an innovative management system.
Andrea Bertini
Co-Founder & CEO
A degree in Business Administration from the University of Pisa, culinary training at ALMA, the school founded by Gualtiero Marchesi, and a Master’s in Food Quality Management and Communication lead Andrea Bertini to work with the kitchens of numerous Michelin-starred restaurants. His passion for this world then drives him to focus on restaurant consulting, where for over 10 years he develops successful formats both in Italy and abroad. In 2023, together with Carlo De Paolis, he founds We Are SODA, focusing on creating innovative formats and enhancing the customer experience, combining strategic analysis with an entrepreneurial vision.
